We had a couple of classroom celebrations this week, so I made these Bear-at-the-Beach cupcakes for the kiddos to enjoy. I tinted the cake batter with blue food coloring (though they ended up looking more pale green.)
I set each one on a gummy Lifesaver inner-tube then topped off each cupcake with a paper umbrella. They were a bit time-consuming to make, but the kids seemed to enjoy them. I feel like I've been in the kitchen a lot lately though ... time for a break ... where's my beach and inner tube!?!?

sur la table? Can't wait for you to use it. I thought of using that rainbow cake mix, but i thought it would look better with a dark bottom???? What do you think?
